Was my first thought. I primarily smoke brisket, but I occasionally barbecue ribs and am well aware that you’re looking for a nice pull. You want the meat good and tender, but if it’s straight falling off the bone it’s overdone. Brisket will do something similar where it just falls apart and the flat won’t slice (it winds up mashing into a consistency ala pot roast) when it’s been over-cooked. A nice long, low-and-slow cook is great and all, but you gotta know when to pull it.
